Trio Tortellini Salad

1. Frozen mini ravioli can be substituted for the tortellini. The goal is to include a bite-sized, cheesy pasta of any type.
2. Frozen tortellini are easy to overcook, so once you pour them into boiling water, watch closely until they float to the top. It’ll only take a couple minutes. Remove immediately.
3. Chop regular large yellow tomatoes if you can’t find yellow grape tomatoes. Grape tomatoes are suggested simply because they’re easier to chop and not as messy.
4. Canned and frozen corn contain all the same health-boosting nutrients as fresh corn – fiber, protein, vitamin C and lots of eye-protective phytonutrients.
5. Basil offers a dose of bone-building and blood-clotting vitamin K.
6. Yellow summer squash provides fiber and is an excellent source of vitamin C.
