Selection, Storage and Prep

  1. A semisweet bar coarsely chopped melts slightly more than chocolate chips in these pancakes.
  2. Make sure you’re selecting white chocolate that contains cocoa butter for the best taste and quality. Even though this variety isn’t really chocolate because it contains no chocolate liquor, it does contain cocoa butter. “White-like” chocolate, also known as white confectionary coating, does not contain any cocoa butter whatsoever.
  3. Substitute regular whole-wheat flour if you can’t find white whole-wheat flour. White whole-wheat flour is 100% whole grain but a lighter texture and color.
  4. Optimal storage for whole grain flour is in the freezer. Heat, light and moisture affect whole grain flours, and they spoil more quickly than refined flours due to healthy oils naturally in the germ.
  5. No low-fat buttermilk on hand? No problem, just make your own! Add 1 tablespoon lemon juice or white vinegar to a 1-cup liquid measuring cup. Add enough 1% milk to bring the liquid to the 1-cup line. Let it sit five minutes. Check out a video here.
  6. Old-fashioned oats can easily be substituted for the quick oats, but the batter will be chunkier.
  7. Leftover pancakes? Just wrap two or three together in plastic wrap, then place all in a zip-close freezer bag and freeze up to six months. Simply microwave to enjoy! (Great idea: Freeze an entire batch during the holidays so you’ll have something to serve for surprise guests!)
